My St. Patrick’s Day surprise made for a sweet morning with my oldest fellow. He was the first awake in the house, and he came to my side of the bed to show me the small pile of change he’d found outside his door. Together, we picked up the trail of coins and found our leprechaun's note. We sorted our loot by coin type and counted it up, and he couldn’t believe that the leprechaun had thrown out $2.75! He happily told his father all about the discovery when he came out, and he shared the booty with his little brother before we all threw on some green and took off for our day.
I like having a leprechaun - they aren’t tattle tales like those elves, and they don’t stare at you all day.
Dinner tonight, I gotta say, I’m proud of myself. We had just gotten back into town, both the boys had napped and whined on the way home, and I could have gone out. Since my husband does the dishes, he probably wanted to go out. But we didn’t go out to get dinner. Huzzah!
I am looking down the tunnel at my first full week at my new job, and I wanted to save the takeout for later in case things get wild. So I boiled some water on my first burner for pasta, then chopped two onions to split between two sauce pans on my other burners.
Each onion was sautéed in olive oil, then one got a sprinkling of garlic powder and pepper and set to simmer. The other was set to simmer and covered in spaghetti sauce; I could also have put in some mushrooms or browned meat to heat for this simple pasta dish.
I put two teaspoons of water on my remaining onion, seasoned and still popping. Then I drained a can of black beans and put them in to simmer, and I rinsed my strainer for the pasta now on the boil. I mashed the beans into a paste using my potato smasher, warmed some corn tortillas in the microwave, then spread sour cream and salsa on the tortillas. Enter the bean paste, and black bean burritos were up for grabs, too!
The beans disappeared, leaving pasta with red sauce to go with some defrosting shrimp tomorrow. I used to be disappointed about leftovers- now, I happy dance when I have something in the fridge to warm up.
